Truffles on the tasting menu at Serrae Villa Fiesole
Starting November 7, Chef Antonello Sardi proposes the new “Truffle” Tasting Menu to masterfully enhance the white truffle, considered one of the most precious and coveted treasures of traditional Tuscan cuisine.
Chef Sardi, known for his talent and the innovation that distinguishes his dishes, has conceived a culinary journey in which the white truffle is the undisputed protagonist, fully enhancing its intense and enveloping aromatic notes.
The menu begins with a refined dish of Tagliolini al Burro della Normandia, dressed with 36-month aged Parmigiano Reggiano and enhanced by Savini's prized White Truffle. This combination of the highest quality ingredients harmoniously blends simplicity and luxury, enhancing the different textures and delivering an explosion of enveloping and lingering flavors.
Next, a truly surprising second course: Braised Pork Cheeks, enriched by the presence of truffled porcini mushrooms and again by the precious white truffle. This combination of elements creates an explosion of authenticity and intensity of taste, giving guests a truly memorable dining experience.
The gastronomic journey proposed by Chef Sardi concludes with a sophisticated dessert: a Cremoso ai Porcini e Cioccolato Fondente 74% Valrhona, further enhanced by the presence of wildflower honey and, of course, the white truffle.
The sweetness of the finale is then further enhanced by the Piccola Pasticceria signed by Pastry Chef Ludovica Dellaria, a true ode to elegance and maniacal attention to detail, in perfect harmony with the Chef's culinary approach.
